Sourced in Tuscany, where my sister Chelsea's longtime friend Beatrice is on the ground during harvest, selecting olives at their peak and pressing them within hours.

The oil is shipped by air to New York almost immediately, preserving its potency, vibrancy, and high polyphenol count.

Unfiltered and completely untouched, it carries the full character of the grove. Peppery, grassy, alive.

Each bottle holds the fingerprint of the farmers and the land it came from.

Finish your bolognese with a generous drizzle just before serving. Spoon it over warm lentils. Or pour it over vanilla ice cream with flaky salt alongside our brown butter chocolate chunk cookies. It is that good.

Grove Location: Montalbano, Tuscany, one of eight sub-areas of Chianti DOP.
Olive Varietals: 40% Frantoio, 40% Moraiolo, 10% Mignola, 10% Leccino.
Appearance: Vibrant, green color.
Farming Practices: Organic, biodynamic farming.
Pressing Practices: Exclusive, family-run frantoio. Machines cleaned between each press. Continua Two-Phase method.
Single Estate: Each bottle contains olives from one grove.
Freshness Countdown: Last day of the harvest was November 15, 2025.
Batch: 1200 bottles. Small-batch Olio Novo.
Nutrients: 494.174 mg/kg polyphenols. Rich in antioxidants, vitamins and tocopherols.
