Flaky, buttery puff pastry wrapped around frost-sweetened organic spinach grown in high tunnels or under protective fabric, where the cold draws out a natural sweetness. Creamy sheep’s milk feta, fresh herbs, bright lemon zest, and tender spring onions and spring garlic. Finished until golden and crisp, with a tender, savory center.

Ingredients

Puff Pastry (Wheat Flour, Butter, Water, Sea Salt), *Spinach, Feta Cheese (Pasteurized Sheep’s Milk, Salt, Cultures, Enzymes), *Spring Onions, Pasture-Raised Eggs, *Scallions, Parmigiano Reggiano, Extra-Virgin Olive Oil, *Lemon Zest, *Dill, *Parsley, *Spring Garlic, Kosher Salt

Instructions

Preheat oven to 400°F.

Place frozen hand pies directly on a sheet tray or on a rack set over a sheet tray. Brush with egg wash (optional).

Bake for 20-22 minutes.

Let cool. Enjoy warm, or later at room temperature. These are best enjoyed a little cool.

How to Serve

Enjoy for Breakfast on their own or pair with scrambled eggs

Add to a grazing board with olives, cucumbers, and hummus

Pair with a crisp green salad dressed in lemon and olive oil

Cool and cut and serve as a cocktail grazing spread

Warm and pack for a picnic in the park

Serve alongside dill yogurt or tatziki
